Fluffy Banana Fritters

Overripe bananas in my house almost always guarantees, fluffy banana fritters. What makes them fluffy is the addition of baking powder. Traditionally most people either don't use baking powder, or they add very little. I however like my fritters fluffy, after trying this recipe, I hope you like it too.

Here's what you'll need:

4 ripe bananas

1/3 cup brown sugar

1/2 cup white sugar

pinch of salt

1 tsp cinnamon

1/2 tsp nutmeg

1 tsp. Vanilla

1 large egg

3 cups flour

1 tbsp baking powder

1 cup milk

Vegetable Oil

Mash bananas with sugar, spices and vanilla. Whisk egg in. Combine flour and baking powder, sift into banana mixture aleternating with milk and whisk until fully combined. Allow batter to sit for 5 minutes before frying.

Heat oil on high and use 1/4 measuring cup to spoon batter into pan. Fry fritters until crisp and golden on both sides, remove from pan and place on paper towel to soak up excess oil.

**You may occasionally have to add more oil.**
