Roasted Garlic

Let me first start this off by saying, I LOVE GARLIC, especially roasted garlic. Now some of you may hear roasted garlic and think, "I'm not even going to attempt that," well I'm here to tell you, it's not rocket science and you'll be roasting garlic like a pro in no time. Here's what you'll need:
1/4 cup olive oil
head of garlic
kosher salt
pepper
Preheat your oven to 350°F. Cut about 1/4 inch off the top of your garlic, to expose cloves. Place garlic in small baking dish. Add 1/4 cup, as my fairy cook-mother Ina Garten would say, "good olive oil," sprinkle with salt and pepper and toss to coat. Turn garlic cut side up and cover tightly with aluminum foil. Bake until garlic skins are golden brown and cloves are tender, about 55 minutes. Cool and squeeze garlic cloves from skins.
Use for garlic bread, mashed potatoes, tomato sauce or store in an airtight container until you're inspired to get your garlic on.
