Potluck Worthy Baked Mac & Cheese

This mac and cheese recipe isn't Susan who works in HR's recipe. You know, the one you look at sideways because she says claims it's the best you've ever had but your aunt with the rude kids actually makes the best macaroni and cheese you've ever had. Well this is your aunties recipe minus the bad kids, this is a hip hugging, true comfort food recipe.

16 0z elbow macaroni

2 tsp mustard

2 tsp onion powder

1 tbsp garlic paste

3 tsp black pepper

1/4 cup sour cream

4 oz cream cheese

8 oz sharp cheddar cheese

8 oz mozzarella

8 oz pepper jack

3 tbs unsalted butter

2 tbsp flour

(2) 12 oz canned milk

1 large egg

Boil elbow macaroni in salted boiling water for about 8 minutes or until al dente.

Drain pasta from water and set pasta aside in a bowl, add 1 tbsp of butter while pasta is warm and toss so that butter coats pasta.

Preheat oven 350 degrees.

In your pot set to low heat, melt remaining 2 tbsp of butter and add flour to create a light roux. Slowly whisk in milk and stir until sauce thickens. Add mustard, onion powder, garlic paste, black pepper, sour cream and cream cheese. Whisk and allow cream cheese to melt. Add various cheeses, and allow to melt into the sauce. Reserve some cheese for topping.

In a separate bowl whisk egg and pour over pasta and toss. Pour cheese sauce over macaroni and stir, being sure to coat macaroni. In a baking dish (preferably glass) pour your macaroni in and top off with reserved cheese. I sprinkle with dried parsley before placing it in the oven, but that's my personal preference.

Bake in oven for 20 minutes and broil for 5 minutes.
